How to feed and care for your sourdough starter

A starter is remarkably resilient, but the internet has made its care sound like a custody agreement. You do not need to hover over it forever. You need to understand what feeding accomplishes, choose a schedule that matches how often you bake, and keep flour paste out of places flour paste should never go.

What feeding actually does

A starter is a community of yeasts and lactic-acid bacteria living in flour and water. During fermentation, those organisms consume available food and produce acids, gases, and flavor compounds. A feeding keeps a portion of that culture and gives it fresh flour and water.

A common maintenance feeding is 1:1:1 by weight: one part starter, one part water, and one part flour. For example:

25g starter+25g water+25g flour= 75g starter

This is a starting point, not sacred law. A larger feed such as 1:2:2 gives the culture more food and generally takes longer to peak. Temperature, flour, and starter strength all change the schedule, so watch its rise as well as the clock.

A warm kitchen speeds everything up. A starter in Costa Rica may peak well before the same starter in a chilly northern kitchen. If it rises, peaks, and collapses long before the next feeding, feed sooner, use a larger feeding ratio, or move it somewhere cooler.

WTF do I have to discard?

If you kept every gram of starter and added equal flour and water at every feeding, the jar would become an exponential flour problem. Discard keeps the culture at a manageable size and gives the remaining organisms enough fresh food relative to the old, increasingly acidic mixture.

“Discard” describes its role in the feeding process; it does not mean “must go directly into the trash.” Once your starter is established and healthy, you can:

  • Collect discard in a covered jar in the refrigerator for pancakes, crackers, waffles, pizza, muffins, or cake.
  • Compost it in modest amounts, mixed into the rest of the compost.
  • Spread it thinly on parchment, let it dry until brittle, and put it in the trash.
  • Maintain a smaller starter so each feeding creates much less excess.
  • Build only the amount needed before a bake instead of maintaining a giant jar all week.

PLEASE do not put thick starter into your septic system

Wet flour forms paste. Paste can settle, cling, and contribute to plumbing clogs; a garbage disposal does not make it disappear. Septic guidance also recommends limiting food solids because they add unnecessary material to the tank. The concern is not that sourdough yeast will stage a coup inside the septic system. The concern is sending concentrated flour sludge through pipes designed for wastewater.

Use it, compost it, dry it, or trash it

Scrape the jar thoroughly before washing it. Wipe heavy residue with a paper towel or let excess starter dry on parchment before throwing it away. If a trace amount remains on the jar, dilute it heavily while washing—but do not routinely pour a jar of discard into the sink, and be especially conservative when your home uses septic.

How to keep starter in the refrigerator

  1. Feed your starter normally.
  2. Let it sit at room temperature for roughly 1-2 hours so fermentation begins.
  3. Cover it without creating a pressure trap and place it toward the back of the refrigerator, where temperature is steadier.
  4. About once a week, keep a small amount, feed it, give it a short room-temperature start, and refrigerate again.

If you miss a week, do not panic. Cold slows fermentation dramatically, and many starters survive longer stretches. The longer it has been neglected, the more room-temperature feedings it may need before it is ready to raise bread.

How to wake it up for baking

  1. Remove the starter from the refrigerator and keep a small amount—25g or 50g is plenty.
  2. Feed it at room temperature using your normal ratio.
  3. Repeat every 12-24 hours, depending on temperature and activity.
  4. Bake when it reliably doubles or more within roughly 6-8 hours after feeding and smells pleasantly fermented.
  5. Build the quantity your recipe needs while preserving a small amount to maintain.

A starter that has slept for a week may need one or two feedings. One forgotten for months may need several days—or it may be simpler to begin again. Read the starter, not your guilt.

Hungry, neglected, or unsafe?

Usually hungry, not dead

A gray or dark liquid layer can be a fermentation byproduct, and a strong acetone-like smell often indicates hunger. Stir off or pour off the liquid, keep a small amount, and begin regular feedings. Bubbles and renewed rise are good signs.

Throw it out

Visible fuzzy mold, pink or orange streaks, or a truly putrid smell mean the culture is contaminated. Do not scrape off the top and hope for a redemption arc. Discard the entire starter, clean the container thoroughly, and begin again.

A low-waste routine for occasional bakers

Maintain 30-60g of starter in the refrigerator rather than several cups. A day or two before baking, feed the small starter at room temperature. On later feedings, stop discarding and increase the quantities until you have enough ripe starter for the recipe plus a small remainder to keep.

This turns “feeding” into “building what the recipe needs” and dramatically reduces both flour use and the jar of discard slowly developing political influence in your refrigerator.
