Starter from scratch: flour, water, and patience
Building a starter is simple in the literal sense—you mix flour and water—but the first week can feel like supervising a jar through an identity crisis. It may explode with activity, go quiet, smell strange, and completely ignore the day-by-day schedule you found online. Here is how to keep going without guessing quite so wildly.
What you need
- A clear, straight-sided jar: large enough for the starter to triple without decorating the counter.
- A digital kitchen scale: feeding ratios describe weight, not cups or spoonfuls.
- Flour: whole wheat or rye can help get things moving, while unbleached all-purpose flour is perfectly useful for ongoing feedings.
- Water: ordinary potable water, at room temperature. If heavily chlorinated water seems to cause trouble, try filtered water.
- A loose cover: a lid set on top or lightly screwed on keeps debris out while allowing fermentation gas to escape.
- A rubber band or dry-erase marker: mark the level immediately after feeding so “I think it grew?” becomes an actual observation.
A small, manageable starter method
There are many legitimate starter methods. This one keeps the daily flour commitment modest and uses a 1:1:1 feeding ratio by weight: one part existing starter, one part water, and one part flour.
- Day 1: Mix 25g whole wheat or rye flour with 25g water. Scrape down the sides, cover loosely, and mark the height.
- Day 2: After about 24 hours, keep 25g of the mixture. Add 25g water and 25g flour, mix, cover, and mark the new height.
- Days 3 onward: Repeat the same feeding about every 24 hours while activity is limited or slow.
- When it is clearly rising and falling within 24 hours: feed about every 12 hours, or increase the ratio to 1:2:2 if it is peaking and collapsing long before the next feeding.
- Keep recording: note the room temperature, feeding time, ratio, flour, peak height, and how long the rise took.
The dramatic early rise is probably not graduation
A brand-new starter may balloon during the first few days and then appear to stop. That early burst can come from a changing population of bacteria—not yet the stable yeast-and-lactic-acid-bacteria culture you want for bread. The quiet period afterward is frustrating, but it is common.
Keep feeding consistently. Small bubbles, a changing aroma, and even modest expansion still count as activity. Do not bake a naturally leavened loaf just because the jar doubled once on day two, and do not throw it away because day five is less theatrical.
How many days does it take?
“Seven days” is a useful storyline, not a warranty. Some starters are reliably active within a week; others need ten days, two weeks, or longer. Flour, temperature, water, feeding ratio, and the microbial community that happened to arrive all affect the timeline.

Temperature changes the clock
A starter in a warm kitchen ferments faster than one in a cool kitchen. “Room temperature” is not enough information: 68°F / 20°C and 80°F / 27°C can produce very different timelines. A spot around the mid-70s°F / mid-20s°C is a comfortable starting range, but the useful lesson is to record the actual temperature and observe your own jar.
- If the starter peaks and collapses many hours before the next feeding, feed sooner, use a larger ratio such as 1:2:2, or find a slightly cooler spot.
- If it is very slow, give it more time and look for a safely warmer location—not direct sun, a hot oven, or a heating pad capable of cooking your tiny civilization.
- Judge a schedule by the starter’s full rise-and-fall cycle, not by someone else’s clock.
How to tell when it is ready to bake
Look for repeatability. After several consecutive feedings, a ready starter should rise dramatically—often doubling or more—within about 6–8 hours after a 1:1:1 feeding in favorable room-temperature conditions. It should be bubbly throughout, have a clean fermented aroma, and follow a recognizable rise, peak, and fall.
- Mark the starting line: use a rubber band, piece of tape, or dry-erase marker immediately after feeding.
- Write the time on the jar: “fed 8:00 a.m.” is much more useful than reconstructing your morning from vibes.
- Photograph the side: take one photo just after feeding and another near peak from the same angle.
- Watch the top: a domed surface can indicate continued rise; flattening and streaks above the current level suggest it has peaked and begun to fall.
When an AI chatbot can actually help
An AI chatbot can be a useful starter diary with pattern-recognition skills. It can help compare feedings, explain ratios, notice that a warm kitchen is accelerating the cycle, or suggest one variable to test next. Its advice becomes much better when you provide evidence instead of asking, “Is my starter okay?”
A useful starter check-in
- Starter age: the day you first mixed it
- Exact feeding ratio and grams retained, water added, and flour added
- Flour type or blend and whether the water is filtered
- Ambient temperature and any large overnight temperature change
- Time of the last several feedings and time to peak
- How much it rose, measured against the marked starting line
- Whether it is still rising, at peak, or already falling
- Aroma described in ordinary words
- Clear photos from the side and top, ideally just after feeding and near peak
Ask the chatbot to recommend one change at a time and explain why. Keep the record yourself so advice is based on several cycles, not one snapshot. AI cannot smell the jar, test its acidity, identify every organism in a photo, or guarantee food safety. If you see mold, fuzzy growth, pink or orange discoloration, or smell something truly putrid, discard the starter and clean the container; do not ask a chatbot to talk you into eating it.
Troubleshooting the most frustrating moments
It rose once and now does nothing
Very common in the first week. Continue consistent feedings, keep it reasonably warm, and wait for repeatable activity rather than trying to recreate the first bacterial bloom.
It smells like acetone or nail polish remover
It is often very hungry. Feed it, then note how quickly it peaks and falls. You may need to feed sooner or use a higher feeding ratio.
There are bubbles, but it barely rises
The culture may still be developing, or the flour may not hold gas visibly. Use a straight-sided jar, keep the mixture thick enough to trap bubbles, and track several cycles.
It rises quickly and collapses before the next feeding
Your kitchen may be warm or the starter may be getting too little food for the interval. Move from 1:1:1 to 1:2:2, feed sooner, or use a slightly cooler location.
There is liquid on top
A grayish or alcohol-smelling liquid can be a sign of hunger. Pour it off or stir it in, retain a small amount, and feed. Colored or fuzzy growth is different and means the starter should be discarded.
